Alex Atala is the only chef named as one of TIME magazine's 100 Most Influential People in the World in 2013. Atala is chef/owner of the celebrated restaurant, D.O.M. (which stands for Dominus Optimo Maximo in Latin) in Sao Paulo. He is known for utilizing exotic ingredients exclusive to his native Brazil while revolutionizing his country's role in the global food supply chain. For the past 15 years, Atala has worked closely with local scientists and anthropologists to discover, classify, and cultivate new agricultural products from the Amazon region. Along the way, Atala has developed eco-friendly, commercially viable cultivation processes for native produce - including wild palm heart and priprioca root - that are facilitating a new era of sustainable land use in the Amazon.
